Decarboxylation 

 Before starting any recipe with cannabis, we must decarboxylate or activate the THC in our weed then decide what infusion we will utilize for the recipe we are tackling. THC does not naturally occur at a high rate as compound in cannabis. Cannabis buds possess THCA which turns into THC with the application of heat. This is the process that produces the elevating effects of cannabis, and it happens much more than you think!

Infusion

To provide a little more clarification, an infusion is a base ingredient that we mix our decarboxylated cannabis with for the recipe. The infusion essentially works as the agent to deliver the cannabis into your desired recipe. Some of the most popular infusions for cannabis cooking include butter, oil, cream, and honey! 

For this cannabis mocktail recipe, we will be making a new infusion commonly used in mixology. We’ll be making an infused simple syrup, and the recipe could not be easier! 

 

 

Infused Simple Syrup Ingredients (Yields 16 Fluid Oz.)

  • 2 Cups of water
  • 2 Cups of sugar
  • 2 tablespoons of Edible Vegetable Glycerin
  • Roughly 3.5 Grams of Decarboxylated Cannabis 
Directions
  • Pour all the ingredients into a pot. (minus the decarboxylated cannabis).
  • Bring the ingredients to a simmer. (You want it to boil a little bit then reduce the heat to low to allow the simple syrup to reduce and thicken)
  • Once the pot has been brought to its simmer add your decarbed cannabis and allow it to simmer for about 30 minutes. (stir occasionally) 
  • Remove from heat and allow time for the infusion to cool off. 
  • Once cooled off, strain the syrup to remove all the bits of flower from the infusion.
  • Pour into an airtight container and it’s ready for use! 

Now you have your infused simple syrup that is ready to go for all your cannabis mocktail ideas and experiments in the kitchen! 

Espresso Martini Cannabis Mocktail Recipe

  • 4 shots of your favorite espresso 
  • 16 -24 ounces of Oat-milk or your favorite creamer
  • 2 ounces THC infused simple syrup (½ oz per glass) 
  • 4 ounces of maple syrup (we recommend a higher quality syrup for this) 
  • 4 ounces of Non-Alcoholic Vodka 
Directions 
  • Pour all of your ingredients into a cocktail mixer with ice
  • Give the mixer a real good shake to get all the ingredients integrated together. (Stirring the ingredients will not mix them properly due to the different densities, and textures of the liquids we are using) 
  • Pour equally into 4 glasses.
